Parts of a Pressure Canner

BASE POT                                        

Lightweight pressure canning pot base.

   

JAR RACK                                       

A flat stand that sits inside the base pot and in-between jar layers (if double stacking).

  

GASKET                                           

A rubber sealing ring that makes a seal between the lid and base.

  

DIAL GAUGE                                 

Gauge displaying pressure level in a dial canner. Once pressure level is reached, you adjust the heat accordingly.

  

COUNTER WEIGHT

Covers the vent pipe in a dial canner. It is not a weight, it is only a cover so the pressure can build in the canner to then be read
on the dial gauge.

  

WEIGHTED GAUGE 

A set of 3 weights (5lb, 10lb, 15lb) that can be used individually or stacked to regulate pressure for a  weighted canner that covers
the vent pipe.

  

AIR VENT LOCK

A metal air lock that releases a little steam/water during venting but then locks upright when pressure is increasing inside the
canner. This stops the lid from opening during processing. [Safety aspect]

   

VENT PIPE

A small pipe that vents the white steam at the beginning and the counter weight (or weighted gauge) covers this during
processing.

   

OVERPRESSURE PLUG                 

If the pressure is not controlled and gets too high, this will open and release the pressure. [Safety aspect]
