DEHYDRATED BLACKBERRIES

Ideal for snacks, baking, cakes and granola.

Water content: 86%
1kg prepared fresh = approximately 140g dried
    
Ingredients:
Blackberries (firm, ripe fruit)
    
Prepare fruit.
Fresh blackberries: wash and drain. Blanch in boiling water for 30 seconds.
Frozen blackberries: carefully thaw in a single layer and reserve juice for another use.
     
Dry fruit.
Dry on fruit setting until leathery. Cool fruit and check weight (to confirm water content) and check there is no moisture present.
        
FLAVOUR IDEAS
Add extra flavour to the prepared fruit by adding one or more of the following:
  • Cinnamon
  • Lemon
  • Mint
  • Vanilla
     
SERVING IDEAS
  • Blackberries with ginger and peaches
  • Blackberries with honey, vanilla and yoghurt
  • Brown Sugar
  • Cream
  • Honey
  • Ice-Cream
  • Peach
  • Raspberry
  • Yoghurt
