Ingredients:
1 zucchini
1/2 teaspoon salt
1 carrot
1/3 cup almond meal (or breadcrumbs)
1 egg
100g frozen spinach, thawed
1/2 onion, diced
1/2 tablespoon curry powder
1/2 tablespoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon ground ginger
1/8 teaspoon ground cardamom
1/8 teaspoon ground cinnamon
Oil
Greek-style yoghurt (recipe HERE)
Fresh mint leaves
Lime wedges
Method:
- Grate zucchini and sprinkle with salt. Mix well and set aside for 10 minutes.
- Grate carrot and squeeze carrot, zucchini and spinach to remove juice.
- Mix vegetables, almond meal, onion, egg and spices in a bowl.
- Heat oil in a pan and fry handfuls of mixture until golden.
- Finish fritters in the oven if required (180°C/350°F). Drain on paper towel before serving.
- Stack fritters and serve with a spoonful of yoghurt, mint and a squeeze of lime juice.
