A jam made in under 10 minutes, from real ingredients and thickened with chia seeds. Delicious with fresh or frozen blueberries, serve with pancakes, waffles, yoghurt or toast.
Ingredients
for BLUEBERRY CHIA JAM

Yield: Around 1 cup

Blueberries
|
2 cups
|
Maple Syrup or Honey
|
2-3 tablespoons (optional)
|
Lemon Juice
|
1 tablespoon
|
White Chia Seeds
|
2 tablespoons
|
METHOD:
1. Clean jar/s and equipment by washing in hot soapy water and rinsing
well before use.
2. Wash fresh blueberries (or
thaw, including liquid). Measure fruit into a small pan along with a splash of
water to prevent scorching. Stir to combine. Bring to a boil then simmer
covered for 5-10 minutes or until fruit is very soft, stirring every minute or
two. Mash for a rustic jam (or puree for a smooth jam consistency).
3. Add
maple syrup (or honey) to taste. Add lemon juice. Stir well.
4. Sprinkle chia seeds on top and stir well. Set
aside for 5 minutes to thicken slightly.
5. Pour into a clean jar for storage or into
individual dishes.
6. Refrigerate until set.
7. Serve.
TIP: we add
a few tablespoons of blueberry chia jam into a 1-cup capacity dish (with an
airtight lid), top with homemade coconut yoghurt and sprinkle with granola,
fresh fruit or nuts before serving. The sealed containers of yoghurt and jam
will keep for up to 3 days in the refrigerator.
8. Store jars of blueberry chia jam in the refrigerator and
consume within 7 days (or freeze for up to 3 months).
Use
fresh or frozen blueberries;
o Use lime juice (add finely grated lemon and/or lime zest if you like);
o Add 1 teaspoon ground cinnamon, ginger , vanilla or nutmeg (or several of these);
o Use extra lemon and add lemon thyme too;
o Add extra honey or maple syrup;
o Add lemon zest and maple syrup;
