1. Pre-heat oven to 180°C (350°F).
Or setup your outdoor
grill/grilling pan.
2. Wash peaches. Peel if you want (we leave skin
on). Cut in half and remove stones. If you’re using the oven, arrange the peach
halves in a single layer on a lined baking tray, cut side facing upwards.
3. Melt butter then brush over the cut side of
each peach half.
4. Drizzle peaches with the maple syrup.
5. Sprinkle ground cinnamon over the top – as
little or as much as you like!
6. Grill peaches until golden brown on the cut
side and they are soft enough to cut with a spoon or fork – 25-30 minutes in
the oven. For pan grilling/outdoor grilling on
medium heat, flip your peaches once the cut side is coloured to your liking.
7. Serve immediately or set aside to cool to
room temperature, then pack into an airtight container and refrigerate for up
to 4-5 days. Grilled peaches can be served hot, warm or cold – however you like!
NOTES:
o For quick prep, use
freestone peaches. We use firm, fully ripe peaches for this recipe – if they
are soft they can still be grilled/roasted, but will more than likely become
yummy stewed fruit.
o Replace cinnamon with
pumpkin pie spice, ground ginger or even fresh herbs.
o Replace maple syrup
with honey, golden syrup, brown sugar - or other sweetener you like.
o Try grilling/roasting
other fruit – we love roasting pears, quince, plums and nectarines.
